Food & Wine Friday: Surf & Turf Kebobs with Cilantro-Lime Sauce and Wine!

At some point we all crave a taste of the sea, whether you’re enjoying the country or sitting with the sand in your toes. And when that happens, this one question always seems to arise, “What dish will satisfy my craving?” Well, how about a taste of it all and done right in your backyard! Yep, shrimp, steak, veggies and swordfish, all done together with Surf ‘n’ Turf Kebobs! We’ve also paired this food with wines that is not only a complement but wines that will take its deliciousness to a whole other level! Below are the wines we suggest for both prep and serving dishes.

  

Surf n Turf Kebobs with Cilantro-Lime Sauce Recipe

Cooking & Prep Time: 2hrs          Serves: 6

 

Ingredients

The Marinade

a. 6 tablespoons honey

b. 4 garlic cloves, pressed

c. 2 tablespoons Dijon mustard

d. 2 tablespoons grated fresh ginger

e. 1 teaspoon dried crushed red pepper

f. 1/2 cup fresh limejuice

g.  1/2 cup olive oil

h. 1/2 cup dry Sherry

i. 1/2 cup chopped fresh cilantro

j. 6 tablespoons soy sauce

 

The Kebobs

a. 1 1/2 pounds swordfish, cut into cubes

b. 1-pound (steak of your choice) cut into cubes

c. 18 shrimp peeled, de-veined and cut in half

c. 1 large red bell pepper, seeded, cut into 16 squares

d. 1 1-pound eggplant, cut into sixteen 1 1/2-inch cubes

e. 3 small zucchini, trimmed, cut into sixteen 1/2-inch-thick rounds

f. Nonstick vegetable oil spray

g. 1/2 cup (1 stick) chilled unsalted butter, cut into 8 slices

h. 8 plum tomatoes, halved crosswise

i. 2 large peaches with skin, halved, pitted, each half cut into 4 wedges

j. 16 3-inch-long green onion bottoms

 

Instructions

The Marinade

a. Whisk all ingredients in medium bowl to blend.

 

The Kebobs

a. First, place swordfish, steak and shrimp in a separate glass or stainless steel bowl.

b. Next, add 2/3 cup of marinade to each and toss to coat. Once done you will chill for at least 30 minutes and up to 1 hour, stirring occasionally. Make sure you reserve the remaining marinade for basting and finishing sauce later.

c. Now, drain the fish and alternate 2 fish cubes, 2 tomato halves, 2 peach wedges, and 2 onion bottoms on each of 8 skewers.

d. Once done, spray your grill rack with nonstick spray, then prepare barbecue (medium-high heat). Transfer 1 cup reserved marinade to small saucepan for sauce.

e. Grill the kebabs until they are slightly charred and cooked as desired, making sure to turn occasionally and basting with the remaining marinade, approximately 8 minutes.

f. Lastly, bring the left over marinade to a boil in a saucepan. Reduce the heat to medium-low and whisk in butter, 1 slice at a time, allowing each to melt before adding next making sure not to boil. Season butter sauces to your liking with pepper and serve with kebobs.  Bon appetit!
