Yep, mini lasagna cups are all the rage and they are delicious! And of course, we’ll have amazing wines for you. When it comes to lasagna there’s a fine line between messing with tradition and finding perfection; however, we stumbled upon something that brings a new taste buzzing twist! If you’re in need of a delicious Grape Certified wine scroll to the bottom; we promise you’ll love our recommendations. Now, how about you pour yourself a glass of wine before we get started. You deserve it!


Mini Lasagna Cups Recipe:

Serves: 4          Cooking Time: 1 Hour 35 Minutes



a. Your choice of meat sauce, we recommend Trader Joe’s Tomato Basil Marinara

b. 2 tablespoons olive oil

c. 4 whole cloves

d. One 1-inch cinnamon stick

e. 4 cloves garlic, minced

f. 1 medium onion, finely diced (about 1 cup)

g. Kosher salt

h. 1 pound mild Italian chicken sausage, casing removed

i. 1/4 cup tomato paste

j. One 28-ounce can crushed tomatoes

k. 1/4 cup chopped fresh basil

l. Freshly ground pepper


Ricotta Filling:

a. 3/4 cup shredded mozzarella, plus more for topping

b. 3/4 cup freshly grated Parmesan, plus more for topping

c. 3/4 cup part-skim ricotta

d. 1/3 cup mango chutney

e. Kosher salt and freshly ground pepper

f. 1 package wonton wrappers (at least 48)

g. 12 whole small fresh basil leaves



a. Preheat your oven to 375 degrees F.

Making the Meat sauce:

a. In a large skillet over medium-high heat, warm the olive oil. Add the whole cloves and cinnamon stick, and let simmer a few minutes then remove. Add the garlic and onions and sprinkle with a little salt. You will sauté until softened but not browned.

b. Add the sausage, making sure to break up any clumps. You’ll cook until the sausage is no longer pink which is usually about 2 to 3 minutes. Stir in the tomato paste and cook for an additional 1 to 2 minutes. Then add the crushed tomatoes, basil, as well as some salt and pepper. Slowly stir to combine everything and simmer uncovered for about 15 minutes. Once this is done, allow the meat sauce to cool for about 15 minutes before building the lasagna cups. While the meat sauce is cooling, you can begin to prepare the ricotta filling.


Making the Ricotta filling:

a. Stir together the mozzarella, Parmesan, ricotta and mango chutney. Season with you ideal liking of salt and pepper and then set aside.

b. Now to assemble the cups: First, find your favorite cupcake pan. If your pan isn’t nonstick make sure to spray the cups with cooking spray. Place a wonton wrapper in each cup and no need to worry if you’re using square ones.

c. Drop about 1 teaspoon of meat sauce into the bottom of each cup. Then add 1 teaspoon of ricotta filling and cover with a wonton wrapper. Make sure you’re rotating it so that the corners of the first wrapper and the second wrapper are alternating and are not on top of each other. You will repeat this process until you’ve built up three layers total. Oh and top each with a small basil leaf, then another wonton wrapper. Lastly, finish each cup with a spoonful of meat sauce, a little shredded mozzarella and pinch of grated Parmesan cheese.

d. Once this is done you’ll pop them into the oven and bake for approximately 20 minutes.

Important Note: Please do not try and eat these right away! They are HOT, HOT, HOT!!! We’d hate for you to burn your mouth. It’s best to let them rest for at least 7 minutes before serving.
