This Week In Food & Wine: Healthy Antipasto Salad with Wine
If you’ve ever had a good antipasto salad with wine, then you know it’s a guilty pleasure that’s both tasty and healthy. The combination of pickled onions, olives and pepperoncini’s, tomatoes, and eggs atop a bed of freshly chopped romaine lettuce with a delicious red wine vinaigrette dressing, makes for a mouthwatering meal that’s as healthy as it is satisfying! Pair this salad recipe with a white or red Grape Certified wines (see below).
Healthy Antipasto Salad Recipe: Suited for 8 folks, this antipasto salad with wine recipe will take 20 minutes to prepare.
Red Wine Vinaigrette Dressing Ingredients
a. 3 tbsp red wine vinegar
b. 1 garlic clove, minced
c. ½ tsp sugar
d. ½ tsp salt
e. 1/8 tsp black pepper
f. 6 tbsp extra-virgin olive oil
a. 2 cups water
b. 1 tsp salt
c. 2 tbsp sugar
d. 3 tbsp red wine vinegar
e. 2 hearts of romaine, chopped
f. 1 cup fresh parsley leaves
g. 1 thinly sliced red onion
h. 8 oz roasted red peppers, rinsed and cut into ¼ inch strips
i. 6 oz marinated artichoke hearts
j. 1 cup pickled olives
k. 1 cup pickled pepperoncini
l. ½ pound cherry tomatoes, halved
m. 8 hard boiled eggs, quartered lengthwise
a. Add vinaigrette ingredients to a small bowl and whisk until they’re well combined.
b. In a saucepan, boil the water, salt, sugar and vinegar. Add red onion and simmer until crisp-tender, about 3 minutes. Drain and cool.
c. Spread romaine on a large platter, scattering on top the parsley, peppers, artichokes, olives, pepperoncini, tomatoes, onion and egg. Whisk and add vinaigrette to salad. Bon Appetit!
Bonus Cooking Tips:
a. Add meats (salami, pepperoni, etc.) for a more filling salad.
b. Pickle the red onion while prepping the vinaigrette the day before for a tastier salad recipe.
c. Top with Parmesan or Asiago cheese for an added dimension.

GRAPE TIP: If you’re going with a white wine, make sure it’s chilled between 55°F – 65°F. If you’ve chosen a red wine, pour it into a decanter and serve between 60°F – 65°F. Cheers!
