This Week In Food and Wine: A Quick and Healthy Greek Quinoa Salad and Wine!

We all know the Mediterranean has an abundance of greatness; its food, beauty and of course its wines are all things that must be experienced at some point in life. Because of this and in keeping with the Quinoa health trend, we’ve decided to bring you a little slice of this heaven on earth right into your home. And because it’s healthy and delicious, the combination of this Greek quinoa salad and wine gives you the best of both worlds and will surely make your day! Our suggested wine pairings are Gewürztraminer, Pinot Bianco, Friulano. Try these delicious Grape Certified Mediterranean wines:

The Greek Quinoa Salad and Wine Recipe

Cook & Prep Time: 1.5 Hours          Serves: 4



a. 3 tablespoons freshly squeezed lemon juice

b. 1 tablespoon red wine vinegar

c. 1/4 teaspoon dried oregano

d. 1 clove garlic, smashed and finely chopped to a paste

e. Kosher salt and freshly ground black pepper

f. 1/4-cup extra-virgin olive oil

g. 1 cup quinoa

h. Kosher salt and pepper

i. 2 cups red and yellow grape tomatoes, halved

j. 1 cup pitted kalamata olives

k. 2 green onions (green and pale green part), thinly sliced

l. 2 pickled cherry peppers, diced

m. 1 small red onion, halved and thinly sliced

n. 1/2 English cucumber, cut into small dice

o. Feta, for sprinkling


Cooking Directions

a. Whisk together the lemon juice, vinegar, oregano, garlic and some salt and pepper in a small bowl.

b. Slowly whisk in the oil until it is emulsified. Once done, let sit at room temperature while you prepare the salad to allow the flavors to meld.

c. Next, rinse the quinoa in a strainer until the water runs clear.

d. Now, combine the quinoa, 2 cups water, 1-teaspoon salt and 1/4 teaspoon pepper in a small saucepan.

e. Bring to a boil and cook until the water is absorbed and the quinoa is tender. This usually takes about 15 minutes.

f. Once done, go ahead and transfer to a bowl, fluff with a fork and let sit for 5 minutes to cool slightly.

g. Add the tomatoes, olives, green onions, cherry peppers, red onions, cucumbers and dressing and toss to coat. Cover and refrigerate for at least 1 hour and up to 8 hours before serving. The longer it sits the better the flavor.

h. Lastly, and just before serving, transfer to a platter and sprinkle with feta on top!
