Honestly friends, what’s better than a choice steak? How about bacon wrapped filet mignon steaks and wine, a delicious glass of Grape Certified wine! Ding, ding, ding; we have a winner! Now fellas, you may want to take the lead here as our recipe calls for grilling these steaks. And we know how much you love the smell of smoke and freshly grilled steaks. So this is your hero dinner fellas, not only can you save your lady the hassle of the grill, but choosing to enjoy a choice wine with her will most definitely put you in her good graces. It’s okay, no need to thank us later for the enjoyable evening. Now considering that Filet Mignon steaks wrapped in bacon will have a rich, buttery texture and be full of savoriness and juiciness, we are going to suggest the following types of wine. These varietals provide bold flavoring that can only compliment the tastiness of the dish. Ladies and gentlemen here are your wine suggestions!

 

Ingredients:

a. 2 tablespoons butter

b. 1 tablespoon minced shallots

c. 2 tablespoons minced parsley

d. 4 filet mignon steaks (cut from a whole beef tenderloin), 1 1/2_ thick

e. 4 slices best-quality smoked bacon

f. Olive oil

g. Kosher salt and some fresh ground pepper

h. Wood toothpicks, soaked in water

 

Grilling Instructions:

Direct with Medium Grill Heat

a. In a small saucepan, melt butter and shallots together. Remove from heat and add half of the parsley and a pinch of salt and pepper. Once this is done, set aside and keep warm.

b. Meanwhile, wrap a bacon slice around each filet and secure with a toothpick that has been soaked in water for at least ten minutes. (If you so desire and youÍre a bacon lover, please feel free to use more slices of bacon.)

c. Now brush each filet lightly with olive oil and season them with salt and pepper. Place the filets directly on the grill and cook about 5 minutes on one side and then 5 minutes on the other for a medium rare finish. Although this is ideal for this cut of steak, you can add time to each side for a more done finish

** A very important note though, DO NOT try and grill over high heat or the bacon will flare-up and burn!

d. Lastly, remove the Filet Mignon steaks from the grill to a clean platter. Brush both sides with earlier made butter, shallots and parsley mixture. Let rest for 5 minutes, garnish with remaining parsley and serve immediately!
