Are the cloudy skies of May Grey and June Gloom getting you down? Well let’s cheer you up a little by putting some summertime food and wine on your mind. We’re glad to say these cloudy skies are only temporary with the summer of 2015 tight around the corner and once it is, you’ll be busy with the buzz of life. This fun and busy schedule is why we’d like to introduce you to our Easy Cheesy Nachos recipe.

Believe it or not, even nachos can be paired with wines, and it can be amazing. Ha, we knew we could turn that frown up side down! This simple Nacho’s and wine pairing is perfect for a day by the pool, a sunset on the patio, a gathering at the lake or a summertime picnic in the park. No matter how you choose to enjoy the coming days of summer, we’re sure this easy recipe will fit the setting.

Here’s your Easy Cheesy Nachos Supreme recipe. Your Grape Certified wine suggestions are below.

Serves: 6-8                             Cook & Prep Time: 25 min

Ingredients

  1. 1 lb. lean organic ground beef
  2. 1 medium onion chopped finely
  3. 1 – 2 tablespoons of fresh minced garlic
  4. 1 jalapeno pepper, seeded and chopped finely
  5. 1 small green bell pepper, seeded and chopped finely
  6. 2 – 3 tablespoons of chili powder or 1 package of mild or spicy taco seasoning mix
  7. 1 ½ cups of refried beans
  8. 1 (16 ounce) jar salsa (mild or spicy)
  9. 1 ½ cups grated cheddar cheese
  10. Seasoning salt
  11. Black pepper
  12. Tortilla chips (You can use any amount desired)

Toppings

  1. 1 cup of sour cream
  2. 3 – 4 green onions chopped
  3. 2 large and firm tomatoes, finely chopped
  4. Sliced black olives

 

Cooking Instructions

  1. In a large skillet start by cooking the ground beef with onions, garlic, jalapeno peppers, green bell pepper and chili powder. Make sure the meat is cooked until brown and then drain all the extra juices.
  2. Add in the refried beans and salsa. You’re going to cook stirring until all ingredients are heated through.
  3. Add in ¾ cup grated cheddar cheese and stir until melted.
  4. Place the desired amount of tortilla chips on a large serving platter.
  5. Top with the ground beef mixture and then sprinkle the top of the HOT ground beef mixture with the grated cheddar cheese.
  6. Top with sour cream, green onions, chopped tomatoes and sliced black olives.
  7. Lastly, you can serve either hot or warm but either way it will be delicious.
