James once said, “The taste for luxuries increases with marvelous rapidity under indulgence.” Maybe that makes sense, maybe it doesn’t, but after a week of grinding you deserve to treat yourself to all of the indulgences you deny yourself 4.5 days a week. Swimming with sharks, jumping out of perfectly good planes and eating cheesy sausage casserole are your weekend birthrights! So, maybe the sharks and skydiving are a little extreme but you get the point. How about you grab a bowl, a fork and pour yourself a glass of one of these Grape Certified wines and indulge in the goodness that awaits with this cheesy sausage casserole and wine recipe!

This cheesy potato sausage casserole and wine recipe feeds 4-6 folks. With a prep and cook time of 60 minutes, you’ll be indulging in no time. If you haven’t already, pour yourself a glass of wine while the aroma of cheesy sausage casserole and wine goodness fills the air.

 

Ingredients

1 lb of potatoes

1 lb sausage (try Aidells Chicken Apple Sausage)

4 tbsp unsalted butter

4 tbsp flour

2 cups milk

½ tsp salt

¼ tsp pepper

½ lb diced cheese (try Cabot Vintage White Extra Sharp Cheddar or Velveeta)

½ cup shredded sharp cheddar cheese (try Tillamook or Cabot Extra Sharp)

1/8 tsp paprika

 

Cooking Directions

  1. Preheat oven to 350℉
  2. Peel, boil and cube the potatoes.
  3. Cut sausages into 1/3 inch thick “half moon” then brown in frying pan.
  4. Mix potatoes & cooked sausage in a 2 quart casserole dish.
  5. Mix & continuously whisk diced cheese, butter flour and milk in a saucepan over medium heat until warm, melted and smooth.
  6. Pour white cheese sauce over potatoes and sausage. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  7. Bake in preheated oven for 35-45 minutes or until top is golden brown.

NOTE: For an extra kick and that added indulgence, add Applewood Smoked Bacon (Trader Joe’s). Pan fry to a nice crisp. Crumble and add bacon to potatoes and sausage when adding white cheese sauce.
