Wine Review

When we first had the chance to try the 2013 Carnivor Cabernet Sauvignon it came after finishing a bottle of the 2012 Freakshow Cabernet Sauvignon. And while this normally wouldn’t be a problem, the differences between these two stellar red wines means we weren’t able to fully appreciate the flavorful & smooth Carnivor Cab because of the big & bold nature of the Freakshow Cab. And even though we could tell the Carnivor Cabernet was good we wouldn’t realize how good it was until we tried it a second time a few weeks later, this time giving it our undivided attention.

When we finally gave the 2013 Carnivor Cabernet Sauvignon our undivided attention we immediately knew we had another winner! We paired it with thick cut pork chops, a small green salad, artichokes with dipping sauce and baked potatoes. At first glance this wine is a delight to look at because of its alluring dark complexion. Deep ink colored tones wink at you while you breath life into this wine as it’s poured into the decanter. Although you can enjoy this wine straight from the bottle, you’ll definitely notice (more of) its hidden aromas and flavors after letting it breath for at least 30 minutes.

Once decanted Carnivor takes on a whole new personality. The smells are warm and inviting, with hints of ripe blackberries and raspberries, which linger in the glass, welcoming you into a world of surprisingly delightful flavors. Chocolate mocha, a kick of pepper and toasted oak, fill your mouth with extraordinary depth while slowly finishing with a silky smooth Mmmm. The Carnivor Cabernet Sauvignon will take you to a special happy place after each sip, each glass and every bottle.

There is one more thing we’d like to mention and that’s that the Carnivor Cabernet is most often described as being big and bold. At THEGRAPE we didn’t find this to be the case and having tried it on two very different occasions we’re confident enough to say that it’s more flavorful and smooth. In fact, we tried it alongside the 2012 Freakshow Cabernet Sauvignon and we believe Freakshow is a more accurate example of big & bold. But we don’t believe that a Cabernet has to be big & bold to be delicious.

Note: If you’re wondering why we’re always decanting wines this is why: even though all wines don’t need or may not benefit from decanting, we’ve learned it doesn’t hurt those wines that don’t need to be but improves those wines that benefit from being decanted, even if only for 15 minutes or more.
